I love ice cream but not the sugar or calories.  Peanut butter “nice” cream is my solution to those cravings for sweet creaminess that hit this time of year.  It is refreshing and 100% guilt free with 3 simple ingredients.

 

Combine frozen bananas, maple syrup and MaraNatha creamy peanut butter in a food processor or high powered blender and blend until creamy.  You may need to stop and scrape the sides a time or two while blending to be sure the ingredients are well combined.

Serve immediately for soft serve “nice” cream or pour into a glass dish, cover, and freeze for 1-2 hours for a version that is easy to scoop.

Peanut Butter “Nice” Cream

3-4 frozen bananas, sliced into 1 inch pieces
2 tablespoons maple syrup
¼ cup MaraNatha creamy peanut butter
Combine all ingredients in a food processor or high powered blender and blend until creamy.  Serve immediately for soft serve “nice” cream or pour into a glass dish, cover, and
freeze for 1-2 hours for a version is easy to scoop.

 

Adapt this recipe to please your taste buds!  Here are some of our favorite variations.
-Omit the maple syrup for a lower sugar profile.
-Stir in mini chocolate chips, peanut chunks, shredded coconut, or a dash of cinnamon before freezing.
-Use MaraNatha creamy almond butter for a delightful change in flavor.
